Recipes (Some Weight Watchers, some just healthy, ALL yummy!)

My dinner tonight: Ranch Turkey Burgers
1 lb ground turkey
1 packet dry ranch dressing mix
1 tablespoon onions (or to your taste)
Mix all three ingredients together. Form into 4 patties. Either cook on stove, or bake in the oven, as I did. Make sure you spray your dish with cooking spray. 30 mins at 350. Flip halfway through. Add cheese (I used Kraft Skim Milk American) in last minute of cooking. Put on light hamburger bun and add desired toppings. YUMMMMM! These babies are 3 WW Points Plus (not including the cheese and bun!)

One of my favorite weekend recipes: Flatout BBQ Chicken Pizza
One Flatout Flatbread (You can find them in the deli section)
1/3 cup bbq sauce
1/2 teaspoon minced garlic
1/4 teaspoon cilantro
About a tablespoon of chopped onions
1/2 cup chopped, cooked chicken (I used Tyson Ready Grill Chicken Chunks)
Shredded low or nonfat cheddar and mozerella cheese

Cook Flatout on a cookie sheet sprayed with non-stick cooking spray for five minutes. Then, spread the mixture of bbq sauce, cilantro and garlic on the Flatout. Next, add the cheese, top with onions and chicken and bake for another 15 minutes. Enjoy! This is about 7 points for the whole thing!

Crock Pot Santa Fe Chicken Skinnytaste.com Servings: 8 servings • Size: 1 cup • Old Points: 3 pts • Points+: 4 pts Calories: 190 • Fat: 1.5 g • Fiber: 5.6 g • Carbs: 23.1 g • Protein: 21 g Ingredients: 24 oz (1 1/2) lbs chicken breast 14.4 oz can diced tomatoes with mild green chilies 15 oz can black beans 8 oz frozen corn 1/4 cup chopped fresh cilantro 14.4 oz can fat free chicken broth 3 scallions, chopped 1 tsp garlic powder 1 tsp onion powder 1 tsp cumin 1 tsp cayenne pepper (to taste) salt to taste Directions: Combine chicken broth, beans, corn, tomatoes, cilantro, scallions, garlic powder, onion powder, cumin, cayenne pepper and salt in the crock pot. Season chicken breast with salt and lay on top. Cook on low for 10 hours or on high for 6 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Adjust salt and seasoning to taste. Serve over rice or tortillas and your favorite toppings.
